The Lead Cook is responsible for supervisingthe kitchen efforts, including all food preparation and personnel management inthe absence - or on behalf of - the Sous Chef or Executive Chef. This position, while working the line, alsocompletes the tasks of Line Cook. Thisposition does not oversee the performance of any staff, but does assist theSous Chef in performance management. TheLead Cook is an experienced position in the kitchen with the ability to use allequipment necessary (Flat Top, Grill, Saute, Deep Fryer, Salads, Smoker, andPantry), and possess the training and skills to perform all tasks to achievethe highest quality at the Chef's discretion. This position is responsible for product consistency in the absence ofthe Sous Chef or Executive Chef. Thisposition also serves as the expediter when the pace of business warrants.

Daily Duties, Functions,Responsibilities

• Preparesa variety of meats, seafood, poultry, vegetables and other food items forcooking in broilers, ovens, rills, fryers and a variety of other kitchenequipment.

• Assumes100% responsibilities for quality of products served.

• Actsas the personnel manager in place of the Sous Chef and/or Executive for therelevant shift.

• Overseesand executes kitchen open and close procedures.

• Maintainsand oversees all aspects of food quality control for the relevant shift.

• Mayoversee a functional area of the kitchen operation such as the outdoor grill orprep area on behalf of kitchen management.

• Completesall tasks as Line Cooks or Kitchen Technicians do.

• Otherduties as assigned.

Minimum Knowledge, Skills, and Abilities

• Thorough knowledge of food and beverage industry- back of house operations

• Ability to manage personal responsibilities in ahigh-stress, fast-paced working environment

• Ability to operate all equipment in thekitchen.

• Abilityto follow oral and written instructions.

Educationand Experience

• Backof house experience required 12-months.

• VirginiaDrivers License

PhysicalConditions and Nature of Work Contacts

• Regular contacts are made with individuals from withinthe Back of House and Front of House divisions

• Communication is usually cooperative in nature.

• Work takes place in hot, wet, humid, and loudenvironment for long periods.

• Lifting up to 60 pounds repetitively.

• Conducts work in a standing position; jobrequires frequent standing, walking, bending, stooping and lifting.

• Requires frequent operation of a variety ofkitchen machine/equipment.

• Requiresthe ability to manipulate large quantities of food, dishware, cookware, etc.with hands.

As a brewery, you'll find we like to stick to a handful of, let's call them principles, in what we make here.

First, we're inspired by traditional brewing styles, but you'll notice we might throw in a tasteful left turn here or there. Second, since we're surrounded by nature and are pretty big outdoors aficionados, we generally like to stick to beers on the sessionable side so your rucksack or bike's the only thing weighing you down. And thirdly, we love to make true-to-style beers, mostly lagers. You can call us a lagerhouse if you want, but we're not big on being pushy 'round here.
