Location: We are seeking an experienced Director of Concessions and Restaurants for the Las Vegas Convention Center in Las Vegas.
Unit Description:
The Las Vegas Convention Center is one of the busiest facilities in the world-a 4.6 million-square-foot facility located within a short distance of approximately 150,000 guest rooms. Operated by the Las Vegas Convention and Visitors Authority (LVCVA), the center is well known among industry professionals for its versatility. In addition to approximately 2.5 million square feet of exhibit space, 225 meeting rooms (more than 390,000 square feet) handle seating capacities ranging from 20 to 2,500.
Job Overview:
The Director of Concessions and Restaurants is responsible for providing overall leadership, strategy, and direction for all concession and restaurant operations at the Las Vegas Convention Center. This role oversees multiple Concessions Managers and their teams to ensure consistency in execution, revenue growth, client satisfaction, and operational excellence.
The Director will partner closely with venue leadership and Sodexo Live! senior management to deliver large-scale, high-quality food and beverage services. They will focus on financial performance, workforce planning, innovation, and long-term growth strategies, while ensuring exceptional guest experiences at one of the world's premier convention centers.
Essential Responsibilities:
- Provide overall leadership for concession operations, supervising and mentoring Concessions Managers and their teams.
- Develop and execute business strategies to maximize sales, profitability, and operational efficiency across multiple outlets.
- Ensure all concessions meet Sodexo Live! standards for service quality, food safety, and guest satisfaction.
- Partner with client representatives and venue management to maintain strong relationships and align on business objectives.
- Analyze financial performance, prepare forecasts and budgets, and implement initiatives to drive revenue growth and cost control.
- Oversee workforce planning, including recruitment, training, and development of management and hourly staff.
- Develop and enforce compliance with health, safety, and sanitation regulations at local, state, and federal levels.
- Lead innovation in menu development, guest experience enhancements, and technology solutions to streamline operations.
- Oversee setup, execution, and breakdown for large-scale events, ensuring consistency across concession areas.
- Provide leadership in handling guest concerns, escalated issues, and operational challenges with professionalism and urgency.
- Collaborate with other Sodexo Live! departments (culinary, catering, and premium,) to ensure cohesive operations.
Qualifications/Skills:
- 4-6 years of progressive leadership experience in concessions, food service, or large-scale hospitality operations.
- Prior experience in a convention center, stadium, or high-volume venue preferred.
- Strong financial acumen with experience in budgeting, forecasting, and P&L oversight.
- Demonstrated success in leading and developing multi-level teams, including managers and hourly staff.
- Excellent client service and relationship management skills.
- Strong problem-solving, organizational, and decision-making abilities.
- Knowledge of food safety, sanitation, and regulatory compliance standards.
- Ability to work extended hours, including nights, weekends, and holidays, in line with event schedules.

Other Requirements:
- Must be able to work effectively and safely while subject to wet floors, temperature extremes, and excessive noise.
- Must be able to lift up to 50 pounds in weight and maneuver in an often tightly-quartered environment.
Hours may be extended or irregular to include nights, weekends, and holidays.
