The Music City Center is Nashville's convention center located in the heart of downtown. The 2.1 million square foot facility opened in 2013 and was built so that Nashville could host large, city-wide conventions in the downtown area. The mission of the Music City Center is to create significant economic benefit for the citizens of the greater Nashville region by attracting local and national events while focusing on community inclusion, sustainability and exceptional customer service delivered by our talented team members.

Essential Responsibilities:

    • 4 Years in a Professional Kitchen, Hotel, Convention center, Catering or Upscale Restaurant scratch Culinary Production.
    • Knowledge of From scratch dressing, Cooking, Presentation of cold platters, Fundamentals of Cold Side Production
    • Able to lead Cooks and Temp Professionals for the shift
    • Able to work Shifts on week end and Open to changing shifts
    • Experienced in Mise En place and following recipes, preparing, and presenting cold foods, such as salads, cold soups, meats and cheeses. Plated and on Platters.
    • Knife skills - cutting, chopping, carving, dicing.
    • Ability to fill-in at other stations as needed
    • Responsible include for inventory, preparation, and presentation of select dishes and food items.
    • Able to work in a team-oriented environment and under considerable stress.
    • Responsible for station hygiene and sanitation as per Davidson County Sanitation Mandate
    • ServSafe Certification Preferred..
    • May be required to assist with other duties in the culinary production, including Hot Side or banquet Plate up.
    • Ability to supervise and train others.

    Types of foods commonly prepared and presented by the kitchen Garde manger.

    • Salads and composed Salads in bowls and Plated.
    • Cold soups and Cold Sauces from Scratch like gazpacho, Vichyssoise and Cold Salsa
    • Fresh fruit Platters and Plated
    • Canned and preserved food Production
    • Box Lunches with Prepared Sandwiches, Wraps, and Canape
    • Fresh vegetables, dips, relishes, Dressings
    • Butters and spreads
    • Preserved meats, or charcuterie Boards.
    • Cheeses Boards and presentations platters

Qualifications/Skills:

Required:

  • Minimum of 3 years experience in food preparation in a fast paced environment.
  • Must be able to interact verbally and listen attentively to co-workers and supervisors.
  • Ability to follow written and oral direction.
  • Ability to work under pressure and independently.

Preferred:

  • Culinary degree from an accredited college or university.

Other Requirements:

  • Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.

Hours may be extended or irregular to include nights, weekends and holidays.
