We are looking for Pastry/Culinary school students for our Summer/Fall 2024 externship program in our Pastry department.
Must be enrolled in a culinary/pastry school program requiring an internship/externship to complete graduation.

The Pastry students will practice their ability to produce cakes, pastries, garnishes, ice creams and baked items for restaurant, banquet, and offsite catering use. To learn each of the stations associated with the pastry department. This position is for any student enrolled in a pastry program. This internship is available for Summer and Fall 2024.

Pastry /Extern Program 2024

Overview

Salamander Middleburg's Internship Program is designed to provide current students with a unique opportunity to gain real world experience in the industry. The goal of this program is to develop our future hospitality leaders.

Program Outline

Hands On Experience

Each student will have a home department. This department is where they will spend the majority of their externship and will work towards becoming experts in that area.

Intern Shadow Program

Throughout the program, students will shadow various food and beverage departments such as Harriman's Virginia Piedmont Grill, Gold Cup Wine Bar, In Room Dining and Banquets. Providing this exposure to other departments will ensure the student is knowledgeable about all food and beverage operations and prepare them for their future professions in the industry.

Management Classes

The human resources department will organize classes to educate students on important luxury industry management skills. There will be five classes offered, however, participants are required to attend a minimum of three classes. Participants will also be required to attend one of our weekly leadership meetings.

Book Report and Analysis

Each student is required to read "Emotional Intelligence 2.0" throughout their internship. Salamander will provide the book for all students. They will take the quiz provided in the book and write a one-page analysis on their findings. As they reach the end of their internship, participants will meet with a Human Resources representative to review key takeaways.

ESSENTIAL JOB FUNCTIONS as a Pastry Cook:
• Prep and prepare pastry items for buffet, banquet and restaurant use according to standard recipes.
• Prep for, set up, run, and break down the restaurant lunch and dinner plating stations.
• Visually inspect appearance of baked food for proper color combination and overall presentation to maintain appeal.
• Maintain the food and labor costs as budgeted (or better) with the highest quality and consistent results.
• Ensure proper storage of all pastry items in refrigerators and freezers to maintain product freshness.
• In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the manager based upon the particular requirements of the hotel/resort:
• Properly rotate food products in order to keep spoilage and waste to a minimum.
• Ensure that all equipment in work area is properly cleaned.
• Perform other duties as required, i.e., special orders/buffet presentations and cross- training.

EDUCATION/EXPERIENCE
Must be enrolled in a culinary/pastry school program requiring an internship/externship to complete graduation.

Housing will be provided with minimum cost that includes all utilities and Wifi.

Students must have reliable
transportation.
