A Healthy Workday Snack: Spicy Baked Chickpeas
Need an easy, healthy snack to keep at the office? Whip up a batch of these tasty baked chickpeas over the weekend.

Spicy baked chickpeas have to be one of the easiest (and healthiest!) snacks ever. Seriously—all you have to do is toss some chickpeas together with olive oil and whatever spices or herbs you’re in the mood for, a little bit of salt and pepper, and then bake. That’s it! And, if you’re like me, you usually have an extra can of chickpeas hiding away in your pantry, so you can make these any time you’re hit with a snack attack.

I’ve included a basic recipe, as well as some extra ingredient variations below.

Rinse one can of chickpeas under running water, then dry with a paper towel.

Pour onto a baking sheet and toss with one tablespoon of olive oil, ½ tsp salt, ½ tsp pepper, and ¼ tsp red pepper flakes. Bake at 400 degrees for 20-30 minutes, shaking the pan halfway through.

They’re ready when they’re crispy and golden! Serve warm with an extra sprinkling of salt.

There are so many different options you can try with these, so feel free to experiment with any ingredients you have on hand. Or, try these yummy combinations:

  • Paprika + cayenne pepper
  • Balsamic vinegar + garlic
  • Lime juice + chili powder + cumin
  • Lemon juice + ginger
  • Cinnamon + brown sugar
  • Thyme + rosemary
  • Curry powder + garlic

After graduating from Cal, she spent a couple of years traveling and working (Ireland – NY – OC) before finally making it back to San Francisco to pursue a career in business and marketing. An avid fan of handwritten thank you notes, Niki also loves fresh flowers for any occasion, the sound of being underwater, and she firmly believes ketchup bottles do not belong on the breakfast table. When she’s not Musing, you can find her on her blog, wandering around the Ferry Building in San Francisco, or with her nose in a ridiculously addicting YA book.
