We are currently looking for an experienced Assistant Pastry Chef

The ideal candidate willTrain, supervise and work with all Pastry kitchen staff in order to prepare and present food according to hotel standard recipes in order to create quality food products. Manage the inventory levels of the operational items and equipment in the Food and Beverage Dept.


35% Assign and organize staff prep lists, in detail, to ensure that all BEO and REO orders are completed correctly and on time. Adhere to control procedures for cost and quality.

35% Manage the production and creation of wedding and specialty cakes for in house events and off site catering.

20% Select, train and supervise kitchen staff in the proper preparation of menu items, and standard operating procedures (SOP) to properly set up, prep for, and run each pastry station. Manage and oversee the pastry team weekly cleaning and lineup schedule. Train staff on the Salamander Resort and Spa company policies. Document/coach and counsel staff as needed per company policies and standards.

10% Inventory and placement of food orders to maintain pars set by the Executive Pastry Chef. Rotation of food products so as to comply with health department regulations. Process requisitions for supplies.

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the Executive Pastry Chef based upon the particular requirements of the hotel:

• Report any equipment in need of repair to the Executive Pastry Chef and engineering for service.

• Perform other duties as necessary and assigned, such as V.I.P. parties and staff meetings.

• Effectively run and manage the pastry shop when the Pastry Chef is absent.

• Train staff on the Salamander Resort and Spa company policies.

• Attend training meetings and update staff on new and changing SOPs and policies.

• Prep and prepare pastry items for buffet, banquet and restaurant use according to standard recipes.

• Visually inspect appearance of baked food for proper color combination and overall presentation to maintain appeal.

• Maintain the food and labor costs as budgeted (or better) with the highest quality and consistent results.

• Ensure proper storage of all pastry items in refrigerators and freezers to maintain product freshness.

• Ensure and maintain proper cleaning and organization of all pastry equipment and areas, including storage areas, prep areas, plating stations, refrigerators, and freezers.

• Properly rotate food products in order to keep spoilage and waste to a minimum.

• Perform other duties as required, i.e., special orders/buffet presentations and cross- training.

• Performs other tasks as assigned


• Must be 18 years of age or older.

• Culinary School Associates diploma in Baking and Pastry Arts.

• High school or equivalent education required. 6 months pastry cook 1 and/or pastry sous chef experience required.


• Must be able to speak, read, write and understand the primary language(s) used in the workplace.

• Must be able to read and write to facilitate the communication process.

• Must have full work availability for AM, PM, Weekends, and holidays.

• Requires good communication skills, both verbal and written.

• Thorough knowledge of pastry items and breads.

• Knowledge of accepted sanitation standards.

• Extensive experience with ovens, mixers, food processors, etc.

• Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.

• Must possess basic computational ability.

• Must possess basic computer skills.

• Ability to obtain and maintain any government required license

• May be required: to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form; to deal with problems involving several concrete variables in standardized situations.
