Job Title: R&D Associate Principal Scientist

Duties: Manage the product development cycle from ideation to launch (Reframe and Breakthrough) to meet the agreed timeline and benchmarks following Business processes for the specific Global Grains (GNN) Innovation Projects and Platforms. Provide technical feasibility assessment/perspectives related to new product development. Develop & execute product development programs as chartered with GNG. Design and execute experiments, and analyze and interpret data to make sound technical recommendations on product formula. Provide updates and coordinate with Technical project manager to ensure activities are aligned. Document complete product formulation, ingredients and sensory specifications for new products in the documentation system. Drive the complete development through commercialization and launch of baked grains projects, as well as forward-compatible product chassis to be rolled out to multiple markets. Lead the development of innovative products via existing and emerging food and beverage technologies, collaborating with R&D Platform Leads. Develop and improve products utilizing superior design leveraging expertise in food chemistry, food ingredient functionality and experimental design. Conduct and document product development lab work, including the development of benchtop prototypes, implementation and maintenance of stability testing, and scale-ups for commercialization. Design and execute experiments utilizing the scientific method (DOE), and analyze and interpret data to make technical recommendations on product and process development (MiniTab). Provide technical and business risk assessment/perspectives related to new product development. Advise alternative ingredients and/or processes that would improve product quality or process efficiency. Develop product formulations the leverage expertise in food science and food ingredient functionality. Deliver a robust product design utilizing knowledge of food processing technologies (RBS, Co-Extrusion, Wire Cut, Rotary Mold, Lamination, and Wafer) and food chemistry/preservation (Development of Experimental Design and process methodologies, involving electromagnetic graphs and texture analysis through water migration and behavior). Work with a cross-functional team around the globe to brainstorm product ideas, develop and formulate lab prototypes, strengthen product concept fit, and evaluate the feasibility to scale-up the prototypes via pilot plant trials, as well as partner externally to source ingredients and leverage vendor expertise in ingredient functionality; leading different projects with vendors, sensory & insights (Descriptive Analysis, Focus Groups, Qualitative and Quantitative analysis), universities within others. Perform fundamental economic evaluations on ingredients, ingredient suppliers, and product formulations. Partner with R&D disciplines as Quality Assurance, Food Safety, Nutrition, Regulatory, to ensure robust, safe and legal product designs. Front end innovation/trend research to develop knowledge and identify new areas of opportunity that support the company's strategic market objectives.
Job Requirements: Bachelor's degree (U.S. or foreign equivalent) in Food Science, Food Engineering or related field and six (6) years of experience in the job offered or related role OR Master's degree (U.S. or foreign equivalent) in Food Science, Food Engineering or related field and four (4) years of experience in the job offered or related role. Must have four (4) years of experience with: Food Safety and Quality principles such as Microbiological testing requirements, HACCP, Hazard Transfer Documents, Food Allergens, Food Safety Hazard Assessments, Good Manufacturing Practices, Food Safety Modernization Act, Ingredient and vendor approval processes, and Final Product specifications for Food Safety, Quality, and Sensory parameters; development and manufacture of Baked Goods, Oatmeal and Cereals in the Food Industry; new product innovation from concept to execution, including grains, snacks and baked goods; developing products such as Oatmeal, Ready to Eat cereals, Granola bars, Baked goods and Baked bars, Rice based side dishes, Popped snacks, Frozen food, Chilled snacks, Dairy beverages, Confectionery, and Protein by using technologies, including RBS, Wire Cut, Rotary Mold, Lamination, Wafer Co-Extrusion and Extrusion, Flaking, Agglomeration and Direct expansion; food processing trials in pilot plant and full-scale manufacturing environments; food regulations and food labeling, such as FDA Code of Federal Regulations (CFR Title 21 Parts 58 190), and experience locating sources of food laws and regulations; consumer testing and sensory analysis; interpreting test results, drawing conclusions, and planning steps to optimize product acceptability and appeal; and utilizing sensory questionnaires and measurement scales such as liking, intensity, just-about-right, and agreement. Must have three (3) years of experience with Project Management. Travel required 25% of the time.
