Prep Cook, West Harlem Community Kitchen and Pantry

The Community Kitchen team prepares and serves up to 550 hot meals each day via the Senior Center and Community Meal Programs. The Prep Cook will work closely with the Culinary Manager to carry out the necessary tasks following HACCP and Food Safety best practices. The Prep Cook will also guide and direct volunteers assigned to food preparation and service ensuring that all meals are successfully executed and all guests receive healthy, nutritious meals.

Essential Duties and Responsibilities:
• Ensures Culinary Manager has necessary ingredients for food preparation by sorting and distributing ingredients to appropriate work areas;
• Guides and assists up to 400 volunteers a week to prepare nutritious, from-scratch meals as planned by the Culinary Manager;
• Complies with all sanitation, food safety, health, cleaning and housekeeping rules and regulations of Food Bank For New York City, local health department and other regulatory agencies including but not limited to maintaining clean work surfaces, equipment, work area, and appropriate disposal of refuse;
• Maintains temperature logs and other records to meet reporting and compliance requirements;
• Carries out tasks in an efficient manner, utilizing Kaizen (continuous improvement) approach
• Orients volunteers regarding safe and sanitary cooking and prepping procedures, and assign tasks in order to complete preparation on time and in an organized fashion;
• Supports Community Nutritionist and Culinary Manager in designing healthful menus based on available food products;
• Runs food service line, anticipating food item re-stocking, prepping and appropriate temperature control; Supports a warm and welcoming environment and greets guests when Culinary Manager is not available;


  • Supports Site Coordinator and Pantry Assistant in inventory counts, ordering and receiving of products, product storage using FIFO, dating and labeling completed products, and stock rotation;


• Perform other duties or special projects as directed.

Qualifications:


  • Must possess valid ServSafe and Food Protection Certification;
  • 1 year of restaurant or other professional cooking experience required;
  • High School diploma or equivalent degree required;
  • Culinary Arts certificate or equivalent degree strongly preferred
  • Strong customer service and organizational skills;
  • Inventory experience and knowledge of health sanitation and safety procedures strongly preferred;
  • Team player with good communication and interpersonal skills;
  • Ability to carry out tasks quickly, competently and within designated time frame in a fast-paced work environment;
  • Capable of lifting to 30-50 lbs.; Must be able to lift and remove boxes from delivery truck over an extended period of time on a regular basis
