Bunkhouse has designed and developed a celebrated portfolio of hospitality projects including Hotel San José, Hotel Saint Cecilia, Austin Motel, and Jo's Coffee in Austin, Hotel Havana and Ocho in San Antonio, and El Cosmico in Marfa, Texas.

Responsibilities:

  1. Develop departmental objectives, budgets, policies, procedures and strategies

  2. Train and supervise Food and Beverage Supervisors (i.e. Beverage Supervisor, Kitchen Leaders, Special Events Coordinators, etc.)

  3. Train and supervise all Food and Beverage associates

  4. Schedule F&B associates and assign duties and responsibilities in accordance with work requirements and business levels

  5. Ensure each F&B outlet associate is resolving customer complaints effectively and efficiently, as per hotel policies

  6. Demonstrate a working understanding of labor cost control through effective scheduling and proactive management

  7. Ensure F&B supervisors understand their role in labor cost and scheduling of their department

  8. Monitor employee and guest activities to ensure liquor regulations are obeyed

  9. Check the quality of raw and cooked food products to ensure that Bunkhouse standards are met

  10. Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of guests

  11. Coordinate with corporate Chef to analyze recipes and assign prices to menu items, based on food, labor and overhead costs

  12. Establish cost improvement objectives and implement action plans

  13. Analyze operational problems, such as theft and wastage, and establish procedures to alleviate these problems

  14. Evaluate new products for usefulness and suitability

  15. Meet with customers to discuss specifications for special occasions such as weddings, parties and banquets

  16. Develop operational plan for each special event, including assigning staff and directing service, and convey concise instructions prior to each event in a BEO meeting.

  17. Direct and oversee administrative functions associated with the sales and operations of private events and outside catering functions

  18. Act as client's main point-of-contact throughout special event, or assign subordinate when necessary

  19. Meet with sales representatives in order to negotiate prices and order supplies

  20. Arrange for equipment purchases and repairs, in coordination with Repairs & Maintenance team

  21. Monitor compliance with health and fire regulations regarding food preparation and serving, and building maintenance in lodging and dining facilities

  22. Based on input from Bunkhouse Chef, Implement food portions and courses, production and time sequences, and workstation and equipment arrangements

  23. Implement inventory standards and procedures to consistently conduct an accurate inventory

  24. Perform personnel actions such as hiring and firing staff and consulting with other managers as necessary

  25. Ensure staff has a complete understanding of their job requirements and sufficient training before holding them accountable for results

Education & Experience:

  1. Bachelor's Degree from an accredited four-year college or university in related or closely related field; or any equivalent combination of education and experience.

  2. Five (5) years related experience in hospitality or service industry
