5 Delicious Grab-and-Go Breakfasts

Breakfast is one of my least favorite meals. I don’t know, I just find it a little boring compared to all the possibilities that lunch and dinner have to offer. I try not to skip it, though—they say it’s the most important meal of the day. And who am I to mess with the mysterious “they!”

So, I've come up with a great rotation of quick, easy recipes that I make each week—they're healthy, they're filling, and they get me out the door in five minutes or less. Honestly, you can hardly even call them recipes—they require no complicated ingredients and (almost) no measuring! You'll be on your way to work in no time at all (and you can start figuring out what you’re going to do for lunch!).  

1. Quick Breakfast Sandwich 

This savory breakfast will definitely keep you full all morning. Toast a whole-wheat English muffin. While that’s toasting, spray a bowl with some cooking spray, and then add 1/4 cup of egg whites and a pinch of salt and pepper. Microwave for a minute and half.

Then, cut a cooked chicken sausage (I love the Aidell’s brand) in half, and microwave one half for 1 minute (you can save the second half for another day). When the English muffin is toasted, spread a little butter on top, then top with the egg and sausage.

2. Avocado Toast 

For an oh-so-simple but truly delicious morning treat, simply toast 1-2 slices of bread, mash some avocado with a fork, and spread it on top. Sprinkle with salt and pepper (and a little Tabasco if you're feeling spicy!), and you’ll be good to go.

3. Super Simple Smoothie

This is one of my favorite breakfasts for the hot summer months! Throw 1 cup of yogurt, 3/4 cup orange juice, one handful of frozen strawberries, one handful of frozen raspberries, and 1/2 a banana into a blender, then blitz till smooth. Pour into a to-go cup with a straw for a breakfast you can drink on the go.

4. Easy Breakfast Burrito

Have leftover tortillas from taco night? Turn them into breakfast. Spray a bowl with some cooking spray, then add 1/4 cup of egg whites, a spoonful of salsa, a small handful of cheddar cheese, and a pinch of salt and pepper. Microwave for one minute, then stir, then microwave for 45 seconds. Stir again, and wrap the mixture up into a corn, flour, or whole-wheat tortilla.

5. Mason Jar Yogurt Parfait

And finally: the cutest breakfast around. Grab a mason jar, yogurt, and whatever fruit you have on hand (peaches and raspberries with nonfat Greek yogurt is my current favorite combo). Layer the fruit and yogurt inside the mason jar. If you’ve got some granola, throw a little in a separate container, and sprinkle on top when you get to work.
